Dr. Seuss Wasn’t Lying About Green Eggs

Our Food and Nutrition Services Department offers this recipe for dressing up your egg whites.

AVOCADO EGG WHITES

  • 1/3 cup grape tomatoes or other veggies, sliced in half
  • 3 egg whites
  • 1/4 avocado, mashed
  • Pinch of salt and pepper
  • Olive oil

In a small bowl, combine the egg whites, salt, pepper and avocado. Whisk and set aside.

In a skillet over medium heat, drizzle olive oil. Add tomatoes and cook until tender. Add a little more olive oil to keep eggs from sticking. Add the egg white mixture and cook, stirring occasionally until set, about 30 to 60 seconds. Remove from heat and enjoy. Serves 1.

NUTRITIONAL INFORMATION: 334 calories, 11 grams carbohydrates, 17 grams fat, 35 grams protein, 300 milligrams sodium, 6 grams sugar.
