Watermelon Recipes

 

Lakeland Regional Health’s Food and Nutrition Service provided the following watermelon recipes:

WATERMELON GAZPACHO

Serves 4 to 6

Time: 15 minutes
• 4 cups watermelon seedless, chopped
• 1 pint cherry tomatoes
• 1 cup cucumber, peeled, diced, deseeded
• 10 basil leaves
• 1/4 cup fresh lime juice
• 2 tablespoons fresh chopped parsley

Blend all items in a blender until just smooth and garnish with fresh basil.

NUTRITIONAL INFORMATION PER SERVING: 80 calories, 17 grams carbohydrates, 1 gram fat, 4 grams protein, 29 milligrams sodium, 10 grams sugar.

GRILLED WATERMELON SALSA

Serves 6 to 8

Time: 20 minutes
• 4 cups watermelon grilled, diced
• 1 medium jalapeño, diced
• 1 cup red onion, diced
• 1 cup Roma tomato, diced and deseeded
• 1 lime, juiced, zested
• 1/2 cup fresh mint, chopped loosely packed
• 2/3 cup fresh cilantro, chopped loosely packed
• 2 ounces extra virgin olive oil
• 1 teaspoon kosher salt

Chop all fresh ingredients to a uniform dice. Place in bowl, then add olive oil and salt. Mix thoroughly and serve with chips.
